Abstract
This study was conducted to investigate the moisture sorption characteristics and prediction model of soybean curds prepared by immersing in chitosan solutions (molecular weight = 233, 746, and 1,200 kDa) followed by freeze drying. The equilibrium moisture content had a higher value at lower storage temperature and higher water activity. The monolayer moisture content calculatedusing the GAB equation showed a higher level of significance than that of BET equation. The absorption enthalpy showed that the absorption energy decreased with increasing water activity and decreasing molecular weight of chitosan. The fitness of the isothermcurve was in the order of Oswin, Caurie, Hendeson and Halsey model. The prediction model equations for the moisture content were established by water activity, ln(time), and temperature, respectively. The model equation will be helpful for future work on drying and storage of soybean curd prepared by immersing in chitosan solution followed by freeze drying.
